The humble bagel originates in Poland where it was a tradition amongst the Jewish population. The word bagel or beigel is Yiddish. It’s derived from the German word meaning ring or bracelet. The first written history of this bread product goes back to 1610. At which time bagels were given as gifts to women who had just given birth.
Bagels were brought to the United States by immigrant Poles. The recipe was initially protected by the 300 Manhattan bagel makers. The meetings were held in Yiddish and only the sons of members were allowed to join. The group lost control when the automatic bagel machine was invented in the 1960s.
Bagels have since become a tradition, with fillings as diverse as those who make and eat them. Did you know that it is the only bread product to be boiled before it’s baked, and that the hole in the center has a practical purpose? It allows the baker to thread them along a dowel making it easier to transport them.
